Couscous with Toasted Pine Nuts

Ingredients
- 1/2 c. pine nuts
- 1 c. couscous
- 1 c. chicken stock or water
- 1/2 Tbsp. butter
- 1/2 tsp. kosher salt
- 2 dashes curry powder
- Black or white pepper to taste
Instructions
- In a small sauté pan over medium heat, toast the pine nuts until they brown, between 5 and 10 minutes. Be sure to stir and monitor the nuts, particularly near the end of the cooking time—they will burn quickly once they are at toasting temperature.
- In a small sauce pan, bring the 1 cup of chicken stock to a boil. Once boiling, add the butter, salt, and curry powder and stir until the butter has melted. Then stir in the couscous and remove from heat. Cover the pan and allow it to site for five minutes. Add the toasted pine nuts and pepper and adjust seasoning to taste.
